Biscoff Chia Pudding

Updated: Sep 9, 2022

This creamy Biscoff Chia Pudding is the treat-yourself way to begin the day. The little chia seeds just swell and plum up with all the absorbed liquid, and the result is this amazing creamy texture, with a touch of chew from the seeds and the sweetness from the biscoff, well just a perfect combination to start your day. Don't forget these small little seeds are a great source of protein and fiber, and also packed with some healthy fats.

Ingredients:

  • 4 tbsp chia seeds

  • 1 tbsp maple syrup (optional)

  • 2 tbsp biscoff crunchy spread

  • 250 ml oat milk

Instructions:

  1. Add the milk, chia seeds, maple syrup (remember this is optional, if you like the pudding super sweet you definitely can add this...for me the biscoff.... well, this is more than enough....hahahha) to a large mixing bowl, using a whisk mix everything together for a good minute to make sure the chia seeds are well incorporated.

  2. Then let the mixture sit in the fridge for approximately 2 h to set (or overnight if you can prepare this recipe in advance, if you let it sit overnight, you may end up with a thicker pudding since the chia seeds have more time to absorb the liquid, if this is too thick just add some more milk).

  3. Take out from the fridge and add 2 tbsp biscoff crunchy spread, using a whisk mix everything together until everything is incorporated.

  4. To serve smash some biscoff biscuits and add at the bottom of your jar (of choice) spoon some chia mixture and top with a dollop of your favourite yogurt or whipped cream, add some smashed biscuits, raspberry and some more biscuits 😋

Enjoy!
